Peanut Butter Cups
Peanut Butter Cups:
Anyone else love Reese’s Cups?! I know I do! That being said, making your own is SO much better. You all know I am really big on knowing what you are putting into your body, which is why making it yourself is a great healthy alternative for this delicious chocolate goodness.
This recipe yields about 12 peanut butter cups. I made the chocolate layer twice (for top and bottom layers), because I wanted to make my cups a littler thicker. You are welcome to do it that way or if you want thinner cups only make the chocolate layer once, but make sure to have enough for the top and bottom layers.

Chocolate Layer Ingredients:
-1 cup of chocolate chips
-1 tablespoon of melted coconut oil
Peanut Butter Layer Ingredients:
-1/2 cup of your favorite natural peanut butter
-1/4 cup of honey, agave or natural maple syrup
-2 tablespoons of melted coconut oil
-Sea salt sprinkled over peanut butter IF it does not already contain some
Directions:
1. Start by lining your muffin tin with liners. This recipe makes approximately 10-12 cups, depending on how thick you make each layer.
2. Melt the chocolate chips with the coconut oil on the stove top. Continue until the chocolate is smooth.
3. Pour about 1-2 teaspoons of chocolate to the bottom of each liner. Then place in the freezer for 5 minutes.
4. In another pot, melt the peanut butter, natural sweetener chosen and coconut oil. You only need to do this for about 15 seconds. Make sure to stir it up!
5. Take the cups out of the freezer and add the peanut butter mixture to the top of each chocolate cup. Add salt to the top of each mixture, if desired.
6. Place tin back in the freezer for another 5 minutes.
7. Pour remaining chocolate over each cup.
*My muffin tins are large so I needed to melt extra chocolate. Totally fine if you need to do this, it will just make the cups thicker (which is what I wanted).
8. Place tin in the freezer and let sit for at least one hour.
9. Now you are ready to enjoy! I keep my peanut butter cups in the freezer so they last longer, but if you decide to put them in the fridge they are good for about one week.
